Chocolate brownkies

Hello everyone!!

Today I´m bringing you a really easy recipe for all of you out there chocolate lovers. This cookies are simply amazing and with lots of chocolate and the best thing about it, is that you can easily refrigerate them for almost two weeks an bake them when you want.

Ingredients for 18 to 20 cookies (depending of the size)

  • 120 gr of flour
  • 1 tse of baking powder
  • a pinch of salt
  • 395 gr of dark chopped chocolate
  • 50 gr of unsalted butter
  • 4 large free range eggs
  • 270 gr of light brown sugar

Method:

The first step is to preheat the oven to 180ºC or 350º F and line two baking traes with parchement paper.

Melt your chocolate along with the butter in the microwave in 30 seconds intervals or in a ban mary until everything is completely smooth and combine. Let the chocolate cool.

In the bowl of a stand mixer (or a bowl and a hand mixer) beat together the sugar and eggs until well combine, nice fluffy and almost triple in volume. Without stopping the mixer, add little by little the chocolate mixture and the dry ingredients, so the flour, baking poder and salt.

Once ypu have this thick dough you have differents options, you can refrigerate for one hour, take it out take spoon of each and bake for ten minutes or either refrigerate all night or for a few days and bake it whenever you want and haver freshly naced cookies.

Once the have been baked, they look really thick but when they get cold they thinner out and become cracked on top.
