Baked lemon donuts

Hi everyone! Have you ever heard of baked donuts? Yes, baked and not fried. Well yes, they exist and I have not gone crazy. It is one of the new recipes and booms that arise in the pastry to forget all the oil that a donut absorbs when frying.

Baked donuts are much more fluffy, keep more flavor and are super easy to make. In this case, I used a Wilton mold to bake it but you can’t even look at my homemade chocolate donuts where I teach you a trick to make them without a mold and make them perfect.

Ingredients for 12 donuts:

  • 1 cup coconut or vegetable oil
  • 1 cups white sugar
  • 3 eggs
  • lemon zest
  • 1 cup of milk
  • 3 cups normal flour
  • 1 tablespoon of baking powder
  • 1 pinch of salt.

Preheat oven to 180º. Grease your mold with butter or release spray.

In a bowl, beat the oil, sugar and eggs. Gradually add the flour along with the yeast and the pinch of salt.

Mix until a homogeneous mass is obtained and add the milk little by little until all the liquid has been integrated and no lump is found.

When you have a soft dough add the lemon zest and the toppings you want as split fruit or chocolate.

Fill the molds with a spoon or a pastry bag to half its capacity and bake for 20 minutes or until when you prick with a stick, it comes out clean without any liquid crumbs.

Let cool and enjoy them with a simple glaze or coffee.

I hope you liked it since this recipe was very successful at home and if you want some more flavor you tell me through my social networks.

Many kisses, Soco.

Rainbow bagels

Hello everyone!! How are you?

A few years ago tried for the first time the recipe of bagels, which for those who do not know, are a kind of salty donuts with bread dough super known in England and the United States. They are usually taken with ham, jam or salmon and cheese but you drink them as you take them are very good.I never anaged to post this recipe in english so here it is!

The other day, I decided to try the recipe for the “rainbow bagels” or rainbow bagels because they seemed very funny and somewhat different for a breakfast, party or just having a good time in the kitchen. I must admit that it is a laborious recipe and it takes time but in summer … what better opportunity than cooking and using a good time?

The ingredients are very simple and although I did not prepare a filling, the typical one usually has Philadelphia-style cream cheese and many sprinkles !!!

Here you have a picture of my favorite bagels!

2 and 1/4 teaspoons baker’s yeast
375 mL of warm water
2 tablespoons sugar + 1 teaspoon extra
390 grams of bread flour
2 teaspoons salt
boiling water
1 beaten egg

We begin by preheating the oven to 180º. In the bowl of a blender (I used a kitchen aid) mix the flour with the two tablespoons of sugar and salt.

In a separate bowl, mix the water with the extra teaspoon of sugar and the yeast. Let stand until fermented about 5 minutes. We pass this mixture to the flour and beat at medium speed for 10 minutes to obtain a homogeneous mixture that is not sticky.

We pass the mixture on the sidewalk with a little flour and divide it into as many portions as we want to make colors. I made five and used yellow, blue, pink, green and orange.

Mix each serving with paste dye and pass the dough into small bowls to rest for 1 hour.

Meanwhile we prepare a pot with water and let it boil. Once the dough has grown we stretch it with a rolling pin, superimposing each dough on top of each other.

We cut strips of approximately 2 cm and roll it on themselves as if they were candy sticks. We join both ends and get the shape of the bagel or donut.
We boil the bagels for 1 minute in the water simply to cook the outside. This step is very important because it makes the bales have that special and soft texture inside.

Once boiled, we bake the bagels at 180º for 15-20 minutes until they are golden and firm to the touch.

Let cool and serve with the frosting of cheese, salmon or olive oil. They are delightful and super rewarding when you see them coming out of the oven with all the colors so bright.
Perfect for a different summer breakfast or snack!

Many kisses, Soco.

The best Chocolate Chip Cookies

Hi everyone! Today I´m going to show you how to prepare some cookies with chocolate chips that are amazing. This is such a classic yet one of my favourite recipes!! Many of you will be thinking that is an old-fashion recipe but its grace is found in the golden butter or “Brown butter” that makes the flavor of the cookie much more intense and chocolate.
The recipe is based on a TASTY recipe but is adapted so that it is simpler since the only difficulty is to brown the butter and that it does not burn. Otherwise, it is a very simple cookie recipe but with an exceptional flavor. All the steps are worth it!

  • 1 cup (120 g) bread flour
  • ¾ cup (95 g) all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon baking soda
  • 1 cup (225 g) unsalted butter
  • 2 tablespoons water, room temperature
  • 1 cup (220 g) dark brown sugar
  • ½ cup (100 g) white sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • ½ cup (85 g) chocolate chips

  1. In a medium bowl, sift the flours, salt and baking soda. Set aside.
  2. In a medium or large saucepan, add the butter and melt over medium heat. The larger the tray you use, the faster the process will be!
  3. Boil the butter, stirring frequently. As the water begins to boil from the butter, the solids of the milk in the butter will separate, sink into the bottom and begin to toast and brown. When this begins to happen, be sure to stir constantly so that the butter browns evenly. It can become quite foamy, splash a little and be difficult to see, so watch it closely, remove it from the heat and continue stirring if it starts to foam.
  4. Once the butter has a brown color, remove from heat and pour into a large liquid measuring cup to stop cooking.
Let it cool for one or two minutes, stir and carefully add 2-3 tablespoons of water to the butter so that it rises again up to 1 cup (240 ml) of liquid.
  5. Let cool to room temperature. To help speed up this process, you can place it in the fridge for 10 to 15 minutes. You should make sure that the butter is still liquid when you add it to the dough later, so be sure to remove it after 15 minutes.
  6. In a large bowl, add sugars, vanilla, espresso powder and cold brown butter. Cream together with an electric hand mixer until it is soft and fluffy, 1-2 minutes.
  7. Add egg and yolk and beat until incorporated.
Add the dry ingredients, about ⅓ of the mixture at a time, and beat between the additions until incorporated. It’s fine that there is some unmixed flour on the edge of the bowl, this will be incorporated in the next step.
  8. Using a wooden spoon, fold the chocolate chips and the pieces in the dough
  9. Place the cookies on a baking sheet lined in parchment paper in 3 tablespoon heaps.
  10. For optimal flavor, cover and refrigerate for 1 hour or, even better, overnight.
  11. Preheat the oven to 350˚F (180˚C). Distribute the dough evenly 3 inches (8 cm) from each other on a baking sheet lined with parchment paper.
  12. Bake in a preheated oven for 12-14 minutes. Allow the cookies to cool on the baking sheet for 2-3 minutes before transferring them to a cooling rack to cool completely.
I hope you love this recipe and enjoy it! It´s such a good recipe that every time i make it dissapears in hours.

  • 1 cup of white chocolate chips

In a small skillet or griddle, heat over medium heat with a nut of butter. Once the mixture is at rest, place a good spoonful of dough and let brown about 3 minutes until bubbles appear at the edges. Fairy bread, australian treats!!

Hey there everyone!

It has been such a long time without posting in the blog but this past weeks have been crazy.

Today I´m bringing you a really short recipe that comes from Australia and it´s amazing. I think the best words to describe this amazing recibe are: colourful, shiny, delicious in fact they are small sweety australian treats full of sprinkles.

The best thing about the recipe is that is really easy and you just need three ingredients super easy to find.

This beautiful sweets are presented in triangles and are such a cute thing to eat.

  • around 10 or 15 slices of any bread (try to use loaf bread)
  • 100 gr of soften butter/margarine (salted or unsalted)
  • sprinkles, lots of them in any colours and shapes

This is really is easy. You just have to spread the butter in the bread slices (how much or less you want) and add spinkles. Try to spread a good amount of butter otherwise the sprinkles won´t stick.

And for the final touch, you just need to cut them in triangles and serve them to your guests.

I hope you´ve enjoy this recipe and I want to give special thanks to Juliette for showing me this amazing Australian recibe and for being an amazing roommate.

She also has a blog so make sure you check it.

Thank you so much for reading me,make sure you comment what recibes you want me to make, I promese to write a little bit more in this next weeks.
Lots of kisses, Soco.

Lemon cake and one year with the blog!

Good morning everyone! Today is my blog´s brithday, one year ago I started this project and at has been amazing.

Today I´m bringing you my first baking recibe from the blog but in English so that those who don´t understand english can also make it.

The recibe that I´m showing you today is the first one theta I learned to bake when I was really small because is súper easy to put together.

I called this lemon cake ” Tata´s cake” because my tata (sorry I don´t know how to transalate this word) showed it to me how to prepared and it´s my favourite cake.

· 1 lemon yoghurt
· 1 mensure yoghurt os any vegetable oil
· 3 free-range médium size eggs
· 3 measures yoghurt of white granulated sudar
· 3 measures yoghurt of all-porpuse flour (with no raising agent)
· 1 package of baking powder Royal tupe (16 grams)
· lemon/orange test (lemon/orange extract if you wish but is opcional)

We start by grasing our 23 cm (9 inches) round pan with butter and flour or either a non-stick cooking spray (available in baking shops) and some parchement paper at the bottom.

For this recipe you don´t need to preheat your oven but we will bake the cake a 180º or 350 ºF.

In a mixing bowl (I always do this recibe by hand) we mix together the oil and th sugar. Next we add the eggs yolks keeping the whites in an other bowl because we will need them later.

The next step is to add gradually the flour and baking powder (you don´t have to sift them) until well combained. Make sure you don´t overmix otherwise you´ll get a tough cake.

Once we have this well combained is time to add the flavouring so the lemon zest and if you want a few drops of lemon extract.

Then we need to whipp the whites until soft pics form. You can do this with a normal whisk (it will take around 5-7 good minutes) or use an electric mixer.

Then we need to incorporare the whites into the cake mix being very careful with an spatula or a metal spoon.

Finally we pass our mixture into our pan and we need to bake it at 180º C/ 350 ºF for around 40-45 minutes, until is golden brown an when you insert a tooth pic into the center this comes out clean.

And that it is, I hope you´ve like it, any dought that you have you just have to live me a comment or send me a comment an I will be pleased to answer.

Happy Birthday to my blog, thank you for 3.841 views since the first day and I hope you will contiu to read it.

Lots of kisses, Soco.
